Lobster Stew Recipe

Got home at 2:45 pm from school, and i have decided to come online to share with you guys the good food which my mom cooked for us. It was lobster omelets and to tell you honestly it was really sooo yummy. Lobster Omelets are not our traditional omelet but this recipe will, and a spin on a dish you thought you could only have for lunch or dinner. So here is a great recipe for lobster omelets, so you can try cooking for your family. This is good for 1-2 servings only but it is up to you to add it up depending the quantity of people to be served.


Ingredients:
¼ cup Lobster Meat, chopped
1½ Tbsp sour cream
1 tsp coarse grained Dijon mustard
2 large eggs
1 Tbsp water
1 Tbsp scallion, finely chopped
1 Tbsp fresh tarragon, minced (or ½ tsp dried)
1 tsp butter
salt and pepper to taste

Directions:
In a small bowl, mix sour cream and mustard. Set aside
In a medium bowl, mix eggs, water, scallions and tarragon. Add salt and pepper.
Melt butter in skillet. Add egg mixture and cook until eggs are set.
Spread sour cream mixture and Lobster meat over half of omelet.
Fold unfilled portion of omelet over filling. Serve.
